My great-grandfather is the son of immigrants from Eastern Europe and his surname is Pavkov. I am not sure even what nationality it is, though I assume Serbian. If anyone has any information on this name or where it is from I would greatly appretiate it. Even if it is simply informing me that it is or is not Serbian.

Where did he emigrate to? To the US? If so did you check with Ellis Island?
Pavkov is a name that is used inside Serbia. As to if its "Serbian", that is something that can only be answered when one takes a look at the pedigree chart. Do you have any information to spare such as religion, family saint if applicable, name of theperson that moved and when from where etc.

His name was Milan Pavkov. My mother has written that he was born 19 August 1879 in Saravello, Austria Hungry. I can't seem to find any city called Saravello, though I assume it is Saraflava/Saravale, currently located in Romania. I think this because his niece, who I met before she passed away, was born in Varias, Romania. On ellisisland.org there are three named Milan Pavkov that immigrated to the US, two of which were described as Hungarian-Serbian and the other described as Hungarian-Slovak.
Milan Pavkov's wife was named Juliana Marity Pavkov. On ellisisland.org she appears as Julka Pavkov. She was born 16 July 1887, but I don't know the location. According to ellisisland.org, she was born in Saraflava, Hungry. She came to the US 5 or 6 years after Milan. She is described as Hungarian-Serbian.
If you can tell me anything about these two surnames, Pavkov or Marity, I would really appreciate. I have very little information, I know, but any clue would help so I know where to start.

Pavkov is a surname that is used predominantly in the Vojvodina region. So your best bet would be the archives there.
That would be Saravale, they have a filial parish until 1878 of Großsanktnikolaus. So most likely you would need to focus on that region and the north east of Vojvodina. I dont know how many resources you have but you could consider membership in the society. We can help with writing letters and other fun things
The reason why they are listed as Hungarian-Serbian is most likely because they were then under the realm of the Austro-Hungarian Empire.
